Jack Rudy Cocktail Co. Olive Brine
Our olive brine is made with California Sevillano Olives, a tradition since 1937. We process our olives using the Sicilian Style, a 10-month natural curing process. This process occurs in 25,000-gallon tanks and uses only water, salt, vinegar, and lactic acid. This fermentation-like process means the brine is not flushed or filtered, resulting in an intense flavor. We call it “mother brine” because it’s part of the curing process from beginning to end.
Unlike most market olive brines, which are often imported and cured quickly with chemicals like lye, our natural curing process produces a superior product. Lye-cured olives require multiple tank flushes, leading to a brine that lacks the flavour and colour of ours.
