The Gael - Blended Irish Whiskey

The Gael is blended from mature Irish single-malt whiskeys and single-grain Irish whiskey to produce the fruity cornucopia you might expect from Irish whiskey but with extra levels of complexity from maturation in living oak. It’s a promise of things to come, style-wise, from the bonded rackhouse at J.J. Corry, as well as being an award-winning whiskey in itself.

So far it has taken gold at the San Francisco World Spirits Awards, the Irish Whiskey Awards, the World Whiskies Awards and the International Spirits Challenge, as well as being judged 10/10 by Malt Review.

Reviving the lost art of bonding

Louise McGuane has revived the lost art of whiskey bonding, becoming the first licensed bonder in Ireland in living memory. She ages new-make spirit in the rackhouse on the family farm, located just six miles from the ocean on the west of Ireland’s Wild Atlantic Way. Unusually for Irish whiskey, the casks live the old-fashioned way, as they are supposed to, on their sides, raised off a dunnage floor and breathing an air rich from the sea, the lush green grazing grass and peat bogs, and the wild flowers and mosses growing in the cracks in the limestone karst of the Burren National Park.
